If you’re a newer reader to this blog you might know that I used to decorate cakes and compete in cake shows. Now let’s remember that fact when we look at the birthday cake I made for the littlest Byrd girl this evening……
What a mess! I used defrosted sour cream from the freezer that was way too soupy and I shouldn’t have. I should have just ran to the store for fresh sour cream for the recipe but I didn’t and when I went to crumb coat the cake, it just feel apart. Plus I didn’t take the time to properly prepare the cake pans because I was rushing so the cake was already in rough shape from sticking to the bottom of the pan.
I can decorate cakes!
This was my brother-in-law’s groom cake.
Or the littlest Byrd’s second birthday cake, which is one of my all time favorites.
The Vintage Airplane cake is another on of my favorite cakes of all time with the handpainted top.
Or the Sesame Street cake with Elmo top.
Finally who doesn’t love a Duck Dynasty Cake?
Yet tonight I had a hot mess of falling apart cake on my hands.
I had seen a lovely cake covered in sprinkles on The Cake Blog, and was my original plan to make a similar cake.
Even though it was late and my feet were so tired I decided to keep going and try to save this cake. I crumb coated it as best as I could and threw it in the fridge hoping it would hold and not come crashing down.
Then I pulled it out and frosted it as best as I could while the back side of it kept sinking lower and lower.
Finally I grabbed the sprinkles and went to town, trying to save the cake.
It’s not the best. It’s a sad little cake but there will be a happy 4 year old that will still love it.
Plus she will probably love the store bought cupcakes that will magically appear before her party just incase this one doesn’t make it overnight.

Personally I would just like to say… NAILED IT!
I might even add this to my Pinterest Board of amazing cakes. Or not.
