If you follow my friend, Kelley, on her blog The Grant Life than you might have noticed she’s slightly pumpkin obsessed this fall. So today she has gratefully agreed to share her pumpkin obsession with you by this great recipe for Pumpkin Pie Bark. Yum! I hope you all enjoy.
Its safe to say that I have a slight obsession with pumpkin during the fall. I like them for decoration purpose but I love them for eating purposes. I think its fun to create new pumpkin recipes. This year I have made pumpkin chocolate poke cake, pumpkin spice chai lattes and pumpkin chili to name a few. I can add one more easy homemade recipe to my list – pumpkin pie bark. Its the perfect combination of salty and sweet pumpkin goodness. Plus, its super easy to make!
When I say super easy I mean 3 ingredients and ten minutes kind of easy. To make the pumpkin pie bark you will need:
- White chocolate bark
- Salted pumpkin seeds
- Pumpkin pie spice
Melt your bark over a double boiler. Or if you are like me, a faux double boiler. Fill one pot with two cups of water. Place a second similar sized pot on top of that one and add the chocolate. The indirect steam melts the chocolate perfectly. Stir the chocolate and remove from heat once its smooth. Spread the melted chocolate onto a cookie sheet. Add the pumpkin pie seeds and sprinkle with the pumpkin pie spice. Place in fridge for 20 minutes to harden. Once its harden you can easily break the chocolate into pieces. It will store for up to a week in an air tight container.
The salted pumpkin seeds and the sweet chocolate are just so good together. Its like pumpkin and chocolate were meant to be together. Plus, it sort of looks like a fancy treat and you can trick your friends into thinking you spent a bunch of time making it. Either way, its another easy and delicious pumpkin recipe to add to my ever growing list.
