One of the things that I’ll remember the most about Hurricane Harvey is that time stood still. No one in this area knew what day it was for weeks. Now we might know the day but realizing that it’s the end of September is just mind blowing. Where did this month go? I feel like yesterday was August 28th.
But since it’s almost the end of September, people are moving towards fall. There’s pumpkins lining the front of the stores and more crazy pumpkin spice products that I just don’t understand. I’m having a hard time accepting the fact that it’s actually fall. Maybe part of it is because it’s still hot as all get out here in Houston, but another part is that moving on past this storm is hard.
I talked with a friend this week that admitted she had finally broken down and lost it and for the first time in many conversations, I felt normal. For the first time I wasn’t having to act like I had it all together. Our home didn’t flood but the images and feelings are staying with me. Hearing about friends that flooded and seeing their solemn faces as they try to figure it out is horrible.
67% of businesses in our area flooded which means that a simple trip to a store now takes longer because you have to drive to a different area. Target, Costco, Ulta, Toys R Us, Kohls, HEB, our favorite chinese restaurant, Chickfila, Best Buy, the YMCA and Torchy’s Tacos are just a few of the businesses. And… the saddest of all is that Hobby Lobby flooded. Yes, let’s have a minute of silence for that……
3,000 homes in our immediate area also flooded. 4 couples from our Sunday School class lost their home. 100 families from our church lost their homes.
And then when you start moving forward, it rains and those old feelings come back again.
But we will move forward. Our entire area of Kingwood and City of Houston will be rebuild and be stronger than ever.
Plus I’m toying around with an idea to help people replace their Christmas decorations which has me a little excited right now.

I don’t want to be all sadness and gloom so here’s a little recipe to perk up the mood.
This is the perfect recipe for this time of year. It’s the start of of school apple goodness mixed with the spices of fall.
Apple Spice Cake Recipe
I know what you’re thinking, “is that a pumpkin bread recipe?”. No, somebody (me) just had a brain fart and put pumpkins in the picture. If you’re looking for a great gluten free pumpkin bread recipe than you can find one right here.
However this Apple Spice Cake recipe is just as yummy and the perfect addition to your fall treats and gift giving.
So no, it’s not pumpkin bread but it’s better! Today I’m going to share a great recipe for Apple Spice Cake.
It’s really good. Like you might eat 3/4ths of the loaf good. Might being the keyword, I’m not admitting anything!
If you love spice cakes but want to change it up a bit since pumpkin bread is everywhere right now, this is a great option!
It’s so easy that your kids can do it. I know because my kids baked the one that you’re looking at in the picture. They also baked a few for people in our community. Then they acted like they were unable to understand me when I said, “go clean your room”.
Rather than flavoring this cake using applesauce or dicing apples by hand, this recipe uses apple butter.
Apple butter is amazing stuff. You know it’s great when the word butter is in the title. Just ask The Pioneer Woman, she’ll agree. You can easily find it at the store near the jams and jellies or you can buy it online.
You simply pour one cup of apple butter into the batter after all the other ingredients have been added, mix lightly, and you’re good to go! And if you lick the spoon that the apple butter was on after you’re done, no one will know.

- 2 cups all purpose flour (substitute 1:1 Gluten Free Flour mixed for GF baking)
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- ½ teaspoon ground cloves
- ¾ cup sugar
- ½ cup butter
- 2 eggs
- ½ cup buttermilk
- 1 cup apple butter
- 1 cup powdered sugar
- 2 tablespoons orange juice
- Preheat oven to 350 degrees and grease one large loaf pan or four mini loaf pans.
- In a large bowl mix all the dry ingredients until blended with a whisk or fork.
- In a seperate bowl, cream the butter and sugar. Add in eggs one at a time, mixing in between each egg.
- Alternate adding the buttermilk and dry ingredients into the wet ingredients until it is well mixed.
- Finally add in the cup of apple butter and mix until blended.
- Pour the batter into prepared pans and bake for 1 hour for a large loaf pan or 45 minutes for mini loaf pans.
- Let cool before removing from pans.
- While the cake cools, make the icing.
- Place the one cup of shifted powdered sugar into a bowl and add in the 2 tablespoons of orange juice. Mix well until no lumps remain and then pour over cooled cake and let set for a few minutes before serving.
