- 1 and 1/4 cup Half and Half
- 2 tbsp sugar
- 1 tbsp cinnamon (with more to taste)
- dash ginger
- dash ground clove
- dash nutmeg
- 1/4 cup water
- 3 large granny smith apples peeled and diced
- 2 tbsp brown sugar
- 2 tbsp water
- 1/4 tsp vanilla extract
- In a small sauce pan heat half and half, sugar, cinnamon, and other spices on medium-low until the sugar dissolves. Peel and dice apples while you are waiting for the sugar to dissolve.
- Add apples and let simmer for 30 minutes. Add water as necessary to keep apples covered.
- Remove from heat and let cool for a few minutes.
- Place apples and liquid in a blender and blend well.
- Fill popsicle molds almost to the top, leaving a small amount of space for the brown sugar mixture.
- In a very small saucepan place the brown sugar, two tablespoons of water and the vanilla extract. Heat the mixture on medium low until it is well blended.
- Using a spoon, drop a small amount of liquid on top of all the filled popsicle molds. Do not stir.
- Add one small splash of plain half and half to the top of all the popsicle molds as well and then place the popsicle sticks in the molds and put in the freezer.
- Freeze for 4-6 hours depending on your freezer.
- Run mold under water to release popsicles and do not force them out of the mold. They will break if you force them out.
