Saturday we had a small family birthday party for Princess Newbie. Last year for her party, which also was only for family, I went all out. I killed myself making decorations and planning the rainbow cake for hours. Then the day of the party arrived and I was tired before I even woke up. This year I decided to have a simple birthday party and make easy Ice Cream Cone Cupcakes. Simply they are just cupcakes made in an ice cream cone.
The party last year was great but what I remember of her first birthday party was the work that went into it. If you remember, last year I made her this rainbow cake that was adorable but took a lot of time.
I loved that cake, it’s one of my favorites. This year I didn’t want to kill myself baking and decorating, I just wanted to enjoy the day so I decided to simplify.
My mom used to make cupcakes in ice cream cones when we were growing up. I remember taking them to my third grade class for my birthday and hearing all the “ooohs” and “aahhs” from my classmates.
I knew that nothing could be quickler and cooler than Ice Cream Cone Cupcakes and I was right!
They are so easy to make. You will need one cake mix of your choice, a large box of ice cream cones, frosting and sprinkles.
Make the Cake mix according to directions and then fill the ice cream cones 1/2 to 3/4 of the way full with batter. Do not overfill!!
Place the ice cream cones carefully on a baking tray and place in a preheated 325 degree oven.
Bake for 15-20 minutes or until done.
Pull out and let them cool.
Use a pastry bag or baggie with a corner cut off to make a swirl of icing on top of the cupcake. Don’t worry if it’s not perfect. You will have to use a from scratch buttercream icing recipe to get an actual swirl. If you use a can of icing it won’t hold into a cone shape.
Before the buttercream sets, gently roll the cupcake icing in sprinkles and you’re done!!

I put the cones in muffin tins but they still tip if you’re not careful. Putting them in your just have to be super careful.
The last time I tried making cupcakes like this, the cones got REALLY soggy! How do you prevent that??
You need to make sure your oven is properly preheated and fill the cones and then immediately put them in the oven to bake.
