Banana bread is an amazing recipe that is delicious anytime of year. However when the temperatures fall and everyone goes pumpkin crazy, it’s easy to kick your normal banana bread recipe up a notch and make banana pumpkin bread. When you have a gluten free person in your family it’s just as easy to make a gluten free banana pumpkin bread recipe.
This recipe is easy and has ingredients that you probably already have.
You’ll need.
1 cup of white sugar
1/2 cup brown sugar
3 eggs
3/4 cup of softened butter
1 small can of pumpkin
2 overly ripe bananas
3 1/2 cups Gluten Free Multi-Purpose Flour (I like King Authur’s)
2 Tsp baking soda
1 Tsp salt
1/2 Tsp baking powder
1 Tsp cinnamon
1/8 tsp nutmeg
1/8 tsp cloves
1/4 tsp ginger
1 cup nuts – Walnuts or pecans (optional)
Two greased loaf pans
Heat oven to 350 degrees
Start by creaming sugar, butter and eggs together until well blended. Add in banana and pumpkin and mix well. Slowly add other ingredients and mix on slow speed, scraping the sides and bottom, until it is all blended together. Stir in nuts.
Pour batter into two pans and bake the bread for 1 hour. Let cool and serve.
