


Gluten Free Strawberry Oat Bars

A filling breakfast bar that is gluten free!
Ingredients
- 1 and 1/2 cup GF baking mix
- 1 and 1/2 cup GF quick oats (not steel cut oats)
- 2 tablespoons Tapioca Flour
- 1 cup packed brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 small jar strawberry preserves
- 1 and 3/4 sticks cold butter - cut into small pieces
Instructions
- Preheat oven to 350 degrees.
- Line a 9X13 pan with parchment paper and butter or grease lightly.
- In a bowl mix all the dry ingredients. Stir the ingredients well to mix. Cut the butter into the mix with two knives or a pastry cutter until it resembles course meal.
- Put a little more than 1/2 of the mixture into the pan and push it down into the pan to pack it down.
- Gently spread strawberry preserves on top of this packed down mixture. If you spread it too rough, the oat mixture will pull up from the bottom of the pan. The amount of strawberry preserves depends on taste. If you really like strawberries, use the entire small jar. If you want just a hint of strawberries do a light layer.
- Sprinkle the rest of the mixture on top of the strawberry layer.
- Place in the oven and let it bake for 30-40 minutes.
- Remove from oven and let cool or serve warm with ice cream.
