Green Strawberry Granita. Nope, I did not say lime margarita. I know what you’re thinking – green strawberries? Yes. Here’s a secret – green strawberries are wonderful. Their flavor is tart and crisp with just a hint of the berry sweetness that we all love. However they’re not the best for eating as they are, that’s why green strawberry recipes are slowly becoming more popular. Green unripe strawberries are the perfect unexpected ingredient.
So what if you bit into a not ripe strawberry before and you didn’t like the taste? It’s ok – no worries. This is the perfect recipe to try it again. The green strawberries work together with honeydew melon to make the perfect balance of tart and sweet. The ending result is as fresh and cool as if summer jumped into your mouth. Strawberry fields in the south are already teeming with fruit waiting to be picked, including green ones. The rest of the country will slowly move into strawberry season in the coming weeks. Find a pick your own strawberry field in your area and ask if they mind if you pick a few green ones as well. Chances are that they’ll gladly let you pick the green ones and then you’ll be only a few steps from green strawberry recipe heaven. Truthfully any mama knows that when you take kids with you to pick strawberries you end up with a ton of not quite ripe ones. Now you know what to do with unripe strawberries! So what’s a granita? Would you rather a margarita? A granita is an icy treat that reminds me of a snow cone but with the flavor fully mixed in rather than just poured on top. Plus it’s easy to make and doesn’t require any fancy equipment. If you own a baking dish and a fork, you can make a granita. To make Green Strawberry Granita you’ll need the following: 1 1/2 cups sliced green strawberries 1/2 of a honeydew melon – sliced into pieces with rind and seeds discarded. A few mint leaves chopped into small pieces 1/3 cup granulated sugar Place all items into your blender and blend well until it’s pureed. Pour the pureed mixture into a medium size baking dish and place in the freezer. Let set in the freezer for 45 minutes without touching it. After 45 minutes take it out of the freezer and scrape the top and sides with a fork to break up the ice that’s forming. Place back in the freezer and pull it out ever 45 minutes to an hour to scrape the tops and sides again. I didn’t keep this to a science. I just opened up the freezer and scraped the granita whenever I walked through the kitchen. Keep doing this until well set, a few hours at least. Mine took 4 hours to set up completely but it might take longer or less time depending on your freezer and the depth of the granita in the pan. Scrape the granita with a fork or edge of a spoon one last time and then place it into bowls and serve! Yum. My four year old ate my entire bowl of granita. It’s good.
