Trader Joe’s Cookie Butter S’mores

Months ago when Trader Joe’s first arrived in the Houston area the word Cookie Butter was floating around like crazy. The most popular questions being “What is Cookie Butter and what do you do with Cookie Butter once you have it?”  My friends…. Cookie Butter is magical. It tastes like creamy cookies but with less fat than peanut butter. Should you eat the whole jar? No but we won’t judge you if you do. Sometimes it is hard to find ways to use cookie butter besides by the spoonful so today I want to bring you the perfect late night snack recipe, Cookie Butter S’mores.  I’m actually not a huge fan of traditional S’mores but occasionally the mood strikes and I crave them. The other day while I was at the store I grabbed all the ingredients to make them including chocolate bars but then two of our kids snuck the chocolate bars to their room and ate them. They are now grounded from all sweets for a week and I was left with an unfulfilled craving. So what’s a girl to do? You do what everyone does when they reach a hormonal crisis, you reach for the Cookie Butter.  These are simple and honestly they taste so much better than traditional s’mores. They also happen to be messier but it’s ok! Just use a plate so you can lick the drippings right off of it because you will want to and hope that your husband is not secretly filming you when you do.  It’s so simple that it only has three ingredients – Cookie Butter, marshmallows and graham crackers! 

All you have to do is spread cookie butter on one half of a graham cracker and place the marshmallow on the other half. Microwave the half with the marshmallow only for about 20 seconds or until it puffs up like a balloon. Do not microwave the side with the Cookie Butter because it melts very easily and the hot marshmallow will melt it for you!  Place cookie butter side of graham cracker on top of the marshmallow side and you have pure Cookie Butter S’more magic waiting to be ate (and licked).  It is the best kind of ooey gooey mess ever made and simply delicious.  Those of you that are still wondering, “what is Cookie Butter” need to plan your next trip or vacation around a Trader Joe’s location and just taste Speculoos Cookie Butter for yourself.  You’ll thank me for it.
